A demanding selection of bunches is carried out, accompanied by dry ice to protect them from oxidation. Then they go to the press, where by applying low pressure we obtain the gota wine. Once in the vessel we carry out a maceration at 5º C and continue with an alcoholic fermentation at 13º C to enhance the extraction of the fruity aromas characteristic of Malbec. After 9 months of working with its lees, we move on to the second fermentation in a stainless steel tank, where we take care of the pressure and temperature not exceeding 16º C. Finally we bottle it taking care of every detail.
