WILDLY REFINEDOn the steep precarious hillsidesof Oaxaca, Guerrero, and Durangovarieties of agave, indigenous to theregion, grow wild and are heavilysought after by the local mezcaleros. These varietals produce flavors that areexotically intense, with rich earth tonesand savory smokiness. From the heart ofthe maguey these flavors are traditionallyextracted to produce mezcal that iswildly refine d. Because we atbozal believe that something wildproduces a far richer spiritagavebarrilThis thick-foliaged, wild agave, takes twelve years to mature.Often used as fencing to divide land in Oaxaca, it intensifiesthe complexity of this mezcal. As citrus and floral notesarise, hints of green peppers compliment the nose. Thepalate is a delightful balance of citrus and creamy banana.productionWe use an artisanal approach toward production in order tocreate an unadulterated style of mezcal. In keeping with the200-year-old tradition, the agave hearts are cooked inearthen pit ovens, later to be crushed and mashed by atahona wheel. Without the addition of artificial yeast,open-air wooden tub fermentation allows the sugars toferment. Our mezcaleros then follow the “Ancestral”tradition by strictly using clay pot distillation to produceour mezcal. An ancient practice that is synonymous with thetraditions of the local peopletasteThe aromatics are herbaceous and spicy with notes of forestgrass and anise flower. A slight sweetness is evident on theunctuous palate with flavors of agave, honey and river stone, finishing with a floral aftertaste. inspirationThe Spanish term, bozal translates to “wild” or“untamed.” We chose this name for our Mezcal in referenceto the wild species of Mexican agave grown in hard to reach, uncultivated lands of Oaxaca, Guerrero, and Durango. Aswell as for the untamed traditions used by our familyoperated distilleries, or mezcaleros, to distill small batchesin those same locations.packagingAlluding to the traditional terra cotta copitas sometimesused for drinking mezcal, we created a series of rusticceramic bottles in earth tones. The label is printed on anaturally flecked paper with an embossed logo, productionspecifications, perforated holes, and the batch numberstamp. These elements are designed to signal the tactilenature of the product and appeal to the specialized craftspirits drinker.
