COA de Jima Reposado is the oak-rested version of a value tequila made at a distillery with a serious reputation: Feliciano Vivanco y Asociados, NOM 1414, in Arandas, in the Los Altos highlands of Jalisco, the family operation behind ArteNOM Selección de 1414, Chamucos and Gran Dovejo. The name is the coa de jima, the round-bladed tool a jimador uses to trim a ripe agave down to its piña, and the brand’s point is that its agave is still harvested by hand that way. The tequila is 100% Weber blue agave grown in the red clay of Los Altos, where the plants run larger and sweeter than in the lowlands, and for the reposado it rests six months in used bourbon barrels, right in the middle of the two-to-twelve-month window the category allows. COA describes light notes of honey and cinnamon over the cooked-agave, citrus and vanilla character of the blanco, with the barrel softening the edges without turning it into a whiskey. At this price it is the tequila for a reposado margarita or a batch of ranch waters, and the distillery behind it is the reason to pick it over the other bottles at the same money.
