Combier Liqueur de Rose is a rose-petal liqueur from Distillerie Combier in Saumur, the Loire Valley house founded in 1834 that invented triple sec and still distils in ten historic copper stills under a hall engineered by Gustave Eiffel’s team. Combier sits in Anjou, the Jardin de la France, and this one is made from rose petals hand-picked in Anjou and steeped in neutral sugar-beet alcohol, then sweetened with natural sugar. It is bottled at 25% ABV, stronger than most of Combier’s fruit liqueurs, which keeps the rose from reading as candy. The distillery’s own notes describe it as rosy and luminous in the glass, with a floral, delicate nose of fresh rose petals and a sweet, fragrant, refined palate, and suggest it as a digestif or paired with chocolate. Combier has been run since 1994 by Franck Choisne, who later bought the distillery from the Bollinger group, and the house holds France’s Entreprise du Patrimoine Vivant label for living heritage craftsmanship. A small measure topped with champagne is the classic serve; it also replaces the rose syrup or rose water in a gin sour.
