Dolin Dry is the benchmark dry vermouth of the cocktail world, made by Maison Dolin in Chambéry, in the French Alps, from recipes unchanged since 1821. Vermouth de Chambéry was granted its own Appellation d’Origine in 1932, the only such protection for vermouth in France, and Dolin is its last independent producer, with medals dating back to Paris, London, St. Louis, and Philadelphia.
It is made from fine white wine and aromatic botanicals gathered from the alpine meadows above Chambéry, and it is pale, fresh, and elegant with subtle herbal complexity and a clean, dry finish at 17.5% ABV. It is the dry vermouth most bartenders reach for in a Martini, and it is lovely on its own chilled with a lemon twist or with soda. Keep it refrigerated after opening.
