Don Félix is named for Don Félix Bañuelos, founder of Destiladora de Los Altos (NOM 1412) in Arandas, Jalisco, and patriarch of a well-known tequila family from the highlands town; the same distillery also makes Hacienda Vieja. The Don Félix range is built on 100% blue Weber agave from the Los Altos highlands, cooked in autoclaves, crushed on a roller mill, fermented in stainless steel tanks and double distilled in stainless steel pot stills, with a fermentation and distillation process that runs 10 to 15 days. The producer works in small batches using agave from its own fields. This reposado is rested in American white oak barrels and bottled at 40% ABV (80 proof). Tasters on Tequila Matchmaker find vanilla and cooked agave leading the nose, backed by caramel and baking spice, with earth and oak joining on the palate; one reviewer sums it up as very agave, earthy and vegetal-forward with some barrel influence.
