Dos Ángeles Caídos, “two fallen angels,” is a tequila made at NOM 1522 in Jalisco’s Tequila Valley from 100% blue Weber agave sourced from the valley itself. The agave is cooked in an autoclave and crushed on a roller mill, but fermentation is where the brand sets itself apart: the agave juice ferments spontaneously in open-air stainless steel tanks, driven by the wild yeasts of the distillery rather than a commercial strain, with no fibers in the tank. It is then distilled twice in stainless steel pot stills. For the reposado, the tequila rests in a combination of French oak and American white oak barrels, for around six months according to reviewers, before bottling at 40% ABV (80 proof). Reviewers on Tequila Matchmaker describe cooked agave with a raisin-like sweetness, a soft caramel tone, fresh minerality and a chocolatey caramel undertone, and note that the oak stays in the background rather than taking over. Sip it neat or over a large cube, or use it anywhere a reposado should still taste of agave: a tequila Old Fashioned or a richer margarita.
