El Jefe, “the boss,” is the tequila created by Ryan Sanchez, a Carmel, California native who spent years running Surf N Sand, the Carmel spirits shop he opened in 2003, before building his own brand. It’s produced at Casa Maestri in the town of Tequila, Jalisco, NOM 1438, a distillery whose partner brands have collected more than 50 medals at the San Francisco World Spirits Competition over a decade. The reposado is made from 100% blue Weber agave from Los Altos and the Tequila Valley, cooked in stone and brick ovens and autoclaves, crushed on a roller mill, fermented in stainless steel and double distilled in a stainless pot still with a copper coil. What sets it apart is the barrel: it rests for a minimum of three months in used American oak barrels that previously aged California Cabernet Sauvignon, before bottling at 40% ABV (80 proof). The brand describes a light gold to amber tequila with light wood, agave, spice and vanilla on the nose, cooked agave up front on a round palate that turns sweet with mild oak and vanilla, and a smooth, spicy finish with fruity agave.
