Fee Brothers Peach Bitters were added to the Fee family’s range in the early 1990s, alongside mint, as the Rochester, New York company began to grow its bitters line beyond aromatic and orange. The family business goes back to an 1840s butcher shop and a wine and liquor store opened in 1864 (the label reads 1863 because a grandfather liked the rhyme), survived Prohibition making cordial syrups and altar wine, and moved into cocktail mixers in the 1950s; today Joe and Ellen Fee, the fourth generation, run it and make close to twenty bitters. Fee’s peach is glycerin-based: water, glycerin, natural peach flavor, caramel color and bitter almond oil, bottled at just 1.7% ABV according to Difford’s Guide. A few dashes work in a whiskey smash, a Mint Julep, a whiskey sour, a gin fizz or a sparkling wine cocktail, and they are a quick way to turn an Old Fashioned into a peach Old Fashioned.
