The Whisky
Limeburners Director’s Cut Batch M337 represents the absolute pinnacle of luxury and cask curation from the Great Southern Distilling Company stock reserves. The “Director’s Cut” designation is reserved exclusively for extraordinary barrels personally selected by the founder, representing the elite fraction of 1% of the distillery’s maturing inventory. Batch M337 is an ultra-premium single cask single malt that highlights the incredible complexity achieved through extended aging in the unique Western Australian climate. Bottled at its natural, unadulterated cask strength, this highly limited masterpiece is non-chill filtered and natural in colour, offering connoisseurs a rare look at the depth, opulence, and ultimate potential of the Limeburners spirit.
Our Tasting Notes
The nose is exceptionally rich, antique, and sophisticated, leading with deep aromas of old leather, dark manuka honey, and polished mahogany, which open up to reveal layers of candied orange peel, dried figs, and a touch of rancio. On the palate, the immense power of the cask strength is masked beautifully by a dense, extraordinarily viscous, and syrupy mouthfeel. Intense flavours of dark cocoa chocolate, espresso beans, and rich molasses cake dominate the palate, perfectly balanced by a complex wave of old wood spice, including ground clove, nutmeg, and damp tobacco leaf. The finish is remarkably long, warm, and resonant, concluding with a dry, elegant wave of toasted walnuts, refined oak tannins, and a final, lingering whisper of sweet fruit paste.
The Founder’s Selection
This prestigious bottling was hand-picked directly from the dunnage warehouses by Limeburners founder Cameron Syme. The Director’s Cut series is Cameron’s personal passion project, allowing him to bypass standard core product constraints and bottle single barrels that display an entirely unique, over achieving flavour trajectory. For Batch M337, Cameron identified a cask where the interaction between the local Western Australian malt and the seasoned oak had achieved a flawless equilibrium, ensuring that the spirit carries all the robust intensity of an older cask strength release while maintaining an immaculate sensory balance.
The Distillery
Situated on the windswept edge of the Princess Royal Harbour in Albany, Western Australia, Great Southern Distilling Company provides an incomparable environment for high-end whisky maturation. The distillery utilises 100% locally sourced Western Australian barley and pure, mineral-rich rainwater collected directly on the property. The maritime microclimate of the Great Southern region—with its cool temperatures, high humidity, and sweeping Antarctic sea breezes—drives a rapid yet beautifully even breathing cycle within the barrels. This unique microclimate is the secret behind the international success of Limeburners, infusing a spirit distilled in traditional small copper pot stills with a maturity and depth that rivals the oldest distilleries in the world.
