Like everything the house has made since 1862, it starts from fresh-pressed cane juice off the family’s own Domaine, fermented with Barbancourt’s proprietary yeast, then distilled in a single column and redistilled in copper pots to a very high proof before dilution with filtered rainwater — a cognac-inherited process that produces something noticeably lighter and more polished than either molasses rum or grassy Martinique agricole.
