The Whisky

Starward Vitalis 15th Anniversary Australian Single Malt Whisky is a limited edition composition of mature Starward parcels selected from six different cask types and bottled at a substantial 52% ABV. Released in 2022 to celebrate Starward’s fifteenth anniversary, Vitalis looks back over the distillery’s development from a small Melbourne whisky project into an internationally recognised Australian producer. The name refers to founder David Vitale and is associated with the Latin word for life. It recognises Vitale’s decision to invest his savings in establishing a whisky distillery built around Australian ingredients, wine barrels and Melbourne’s rapidly changing climate.

Vitalis brings together whiskies matured for approximately four to ten years in red-wine, Tawny, bourbon, first-fill Apera, second-fill Apera and rum casks. These parcels represent several important stages in Starward’s maturation history. Australian wine casks provide red berries, tannin and spice. Tawny and Apera introduce raisins, currants, caramel and roasted nuts. Bourbon barrels contribute vanilla, coconut and oak sweetness, while rum casks add molasses, tropical fruit and a heavier texture. The whisky opens with chewy toffee, raisins, cedar and chocolate coated pineapple. Rich dried fruit, redcurrants and lightly roasted coffee follow on the palate, supported by bright tropical fruit and structured oak.

Bottled at 52% ABV, Vitalis is among Starward’s more concentrated releases. It possesses significant weight and warmth when served neat, but a small amount of water reveals more pineapple, berries, vanilla and caramel beneath its darker chocolate, coffee and oak.

Our Tasting Notes

On the eye, deep amber with copper, polished mahogany and reddish-bronze highlights.

The nose opens with chewy toffee, raisins and chocolate coated pineapple. Caramel, dried apricot and redcurrant follow, accompanied by cedar, vanilla and toasted coconut. With time, banana, hazelnuts, dark berries, molasses and lightly roasted coffee become increasingly apparent.

On the palate, it is viscous, concentrated and warming. Dried figs, raisins and redcurrants provide a rich foundation before pineapple, banana and ripe tropical fruit brighten the centre. Dark chocolate, caramel and coffee beans add depth, while cinnamon, cedar, toasted nuts and wine tannin supply structure.

The finish is long, oily and gradually drying, with chocolate, pineapple and dark fruit giving way to coffee, peppermint, vanilla, roasted nuts and lingering oak.

Craftsmanship & Cask Maturation

Vitalis was assembled from selected Starward single malt parcels matured in six distinct barrel types:

  • Australian red-wine barrels
  • Tawny barrels
  • Bourbon barrels
  • First-fill Apera barrels
  • Second-fill Apera barrels
  • Rum barrels

The precise proportion contributed by each cask type has not been publicly disclosed. The significance of the composition lies in the contrast between fruit, fortified wine richness, tropical sweetness and oak. The whiskies selected for Vitalis reportedly range from approximately four to ten years old. This is unusually broad for a Starward release and allowed the blending team to combine younger, more energetic fruit with older, oak-structured parcels.

Vitalis carries no formal age statement because any declared age would legally need to reflect the youngest whisky in the composition. Its significance rests on cask selection and blending rather than a single maturation number.

The Global Review & Score

The Whisky Company Rating: 8.9/10 (August 2026)

Starward Vitalis is an ambitious anniversary whisky that combines six cask types without losing the tropical fruit and wine-derived richness associated with the distillery.

  • Official Profile: Starward presents toffee, chocolate and pineapple as the expression’s central flavours and identifies it as a celebration of founder David Vitale and the distillery’s first fifteen years.
  • Cask Diversity: Red wine, Tawny, bourbon, two fills of Apera and rum provide fruit, fortified wine richness, vanilla, tropical sweetness and oak.
  • Maturity Range: Components reportedly matured for approximately four to ten years, giving the composition both youthful fruit and older structure.
  • Independent Review: Whiskeyful awarded Vitalis 7.8/10, praising its distinctive Australian character and higher-strength presentation.
  • Bottling Strength: The 52% ABV provides considerable texture and flavour concentration while allowing the drinker to control dilution.
  • Balance: Tropical fruit and caramel prevent the dried fruit, coffee and oak from becoming completely dominant.
  • The Verdict: A substantial and appropriately celebratory Starward combining chocolate-coated pineapple, chewy toffee and redcurrants with raisins, coffee, cedar and toasted nuts. Its complexity and strength make it particularly rewarding with water and sufficient resting time.
