Ocho Reposado is the single-estate, vintage-dated highland tequila rested about eight weeks in ex-bourbon barrels — the house lists apricot, grapefruit zest, and orange blossom on the nose, coffee, white pepper, bitter almond, and toffee on the palate. Carlos Camarena, the third-generation tequilero of La Alteña, created Ocho in 2008 with the late Tomas Estes, the Mexican government’s first Tequila Ambassador, on the wine-world idea that agave tastes of where it grows; every bottle names the rancho, the harvest year, and the elevation, and it’s made at NOM 1474 in Arandas from 100% highland blue Weber agave, slow-cooked in stone ovens, crushed by tahona, fermented with wild yeast in open wooden vats, double-distilled in copper, rested eight weeks and a day in ex-American whiskey barrels — just enough to season, never to cover — and bottled at 40% ABV, additive-free. Wooden Cork: the first single-estate, vintage-dated tequila, certified additive-free. Expect the Plata’s cooked agave, citrus, and pepper with a whisper of vanilla and toffee from the short rest, the field’s character intact, and a long, clean finish; check your bottle for the estate and vintage. Honest note: the lightest-touch reposado from a top-tier distillery — for the drinker who wants Ocho’s terroir with a hint of wood, and the Margarita that tastes of one field. Neat, in a copita, or on the rocks. Ocho, rested.
