The Lost Explorer Mezcal Tobalá is a small batch artisanal mezcal from Oaxaca, made entirely from wild style Tobalá agave, Agave potatorum. Tobalá is a small agave that grows slowly at high altitude in shaded canyons, and this one is left to mature for around ten years before harvest, which is the meaning of the “10” on the label. It is an age of the plant, not of the spirit. The mezcal is crafted in San Pablo Huixtepec, in the Valles Centrales region, under Maestro Mezcalero Don Fortino Ramos, who hand selects each agave at its ideal ripeness. The piñas are roasted in conical earthen ovens, milled, and left to ferment naturally with the distillery’s own wild yeasts before being double distilled in copper alembic stills and bottled unaged as a joven at 84 proof. The brand places sustainability at the heart of production, with a focus on water conservation, regenerative agriculture and support for the local mezcal community, and the bottle is hand labelled and sealed with a biodegradable cork and natural beeswax. Expect an earthy, gently smoky mezcal with dry tobacco, cocoa and wood on the nose, giving way to vanilla, leather and clay on the palate, balanced by Tobalá’s soft fruit and a savoury, umami finish. Sip it slowly at room temperature from a copita, alongside dark chocolate or sea salt caramel.
